Ingredients
- 1 large eggplant
- 1 medium onion, chopped
- 2 tsp cooking oil (Note: grapeseed oil is healthier option for frying)
- 1 tomato, diced
- 3 cloves garlic, minced
- salt, pepper to taste
- 2-3 chopped scallions (garnish, optional)
Instructions
- Wash eggplant, cut into small cubes
- Put into a colander over the sink, sprinkle with a pinch of salt and let sit for 30 mins
- After 30 mins wash eggplant cubes under cold water, drain and set aside
- Heat the oil in a skillet
- Saute onions until golden
- Add drained eggplants to the skillet
- Fry with onions for 2 min
- Add diced tomato (or substitute with a table spoon of pasta sauce)
- Cook on medium heat for until tender, about 20 min
- Add minced garlic and cook for additional 5 mins
- Garnish with scallions or your favorite herb
